Meat-Ah-Balls

Little tiny baby meatballs. What's better than that?

1 lb natural ground beef
1/4 cup breadcrumbs
1/2 cup onions divided
1 egg beaten
1/4 tsp oregano
1/4 tsp thyme
2 garlic cloves
1 140z can organic no salt diced tomatoes
Sunflower oil
A quick word on sunflower oil. Used just as you would olive oil, sunflower oil is great for frying. Its high in vitamin E, Vitamin B, is an antioxidant and has folic acid.
1. Combine the beef, breadcrumbs 1/4 cup onions and egg in a bowl.
2. Mush with you hand until well combined. Add more breadcrumbs if you feel it needs it.
3. Form little baby meatballs and arrange on a plate.
4. Brown the meatballs for 1 min on each side with the sunflower oil.
5. Meanwhile, in a seperate pot fry the rest of the onion and garlic for a few minutes with the sunflower oil.
6. Add the sauce, oregano and thyme and let it get warm and toasty for a few minutes.
7. Throw in the meatballs, bring to a boil and let simmer for 25-30 min.
You can puree this, serve with pasta stars or brown rice.
Makes 30 meat-AH-balls.
